The Wall Street Journal has published a nice article which more or less goes over the history of punch sounds in cinematography. It's nice to see audio get some love from bigger outlets.

I'll grab a store-bought frozen turkey," says sound designer Scott Gershin, whose recent work includes creating punches for the giant robots in "Pacific Rim" (by dropping 40-foot cargo containers on top of each other). "Meat has a slappy sound, but a turkey that's slightly frozen is solid. I'll grab a mallet, because I like to hear the bone crack a little bit, and then I'll smash it, with the microphone slightly in the cavity. You get that cavity compression, and the bones slightly cracking, the organic matter. It sounds gross, but it works.
