"Meat has a slappy sound, but a turkey that's slightly frozen is solid. I'll grab a mallet, because I like to hear the bone crack a little bit, and then I'll smash it, with the microphone slightly in the cavity. You get that cavity compression, and the bones slightly cracking, the organic matter. It sounds gross, but it works.
